It’s The SW Florida Wine Fest!

This past Friday was the Southwest Florida Wine Fest held in Fort Myers, FL. Around thirty people gathered to be served a seven course meal cooked by none other than our very own Jon Phillips. The guests were served delicious hor d’ourves and a specialty Elderflower champagne cocktail throughout the night.

The dinner started with a Sea Urchin Bruschetta. This dish was paired with a Husic Vineyards 2014 Chardonnay.

 The Sea Urchin Bruschetta was followed by a Cucumber Gazpacho with Smoked Corn, Avocado, and Shiso. This soup was also paired with the Husic Vineyards 2014 Chardonnay.

For the First Course, the guests were astonished by the Smoked Tuna with Micro Greens and Ginger Dressing. The plates came out with martini glasses on top to keep the apple wood smoke around the tuna and micro greens. Once the martini glasses were removed, it created a remarkable effect in front of their eyes. This course was paired with a Husic Vineyards Pinot Noir 2014.

For the Second Course, they were served Sear Duck Breast with Gooseberry Sauce and Artichoke Foam paired with the Husic Vineyards Pinot Noir 2014.

After the first four plates, the guests were given a frozen shot glass with Thai Basil Seed Refresher to clear their palates.

For the Sixth Course, which was my favorite course of the night, was an Elk Fillet with Forest Mushrooms and Natural Jus, and Seared Scallop, Aubergine, Squid Ink, Seared Leaks, Shallots, Black Potato, and a Turnip. This course was paired with a Husic Vineyards Carbernet 2012. The reason why this was my favorite course to serve was because the scallops were placed on individual burners that looked like miniature grills for each plate. It was something I feel not many people have experienced and is quite unique.

For the Seventh and Final Course, they were treated to a Caramelized Pineapple, Coconut Ice cream, Cardamom Honey Ginger Syrup, and Pistachio Kulfi. Which was paired with a wonderful Husic Vineyards Late Harvest Semillion 2013.

Museum Events

We had a very eventful night at Naples Depot Museum last night. Guests enjoyed passed hors d’oeuvres consisting of Roasted corn Fritters, Roasted grape and goat cheese crostinis, and mini BBQ short rib phylo cups. We offered a delicious ‘Grits Martini bar’, a salad station, and an impressive spread for the main course including: Grilled flank steak with a Bearnaise Sauce, Chicken Etoufee, and Quail in a red wine sauce, crispy brussels sprouts. To finish the night off we satisfied every sweet tooth with mini chocolate pecan tartlets, Georgia peach milkshakes (my favorite), Mississippi Mud Pie, and Sweet shortcakes with Rhubarb and Cream. Cater Masters 2015 (80)
